Kikkoman is naturally brewed, using the traditional fermentation method: soybeans and roasted wheat are combined with koji mold and salt, then aged over several months to develop a rich umami depth.
During fermentation, naturally occurring compounds such as glutamic acid (MSG), lactic acid, alcohol, succionic acid, and glucose develop—but no additives are added intentionally.
